Wow – time is flying! Can’t believe it’s only 4 months until we travel to Savannah and get married!! Invitations are being printed and we can’t wait to get them in the mail. We will reveal them here after the wedding.

The weather in Knoxville is finally starting to seem like spring. It’s been an unusually chilly, rainy spring this year. Our rainfall is over a foot more than normal. All we need are some monkeys and an gekko and we’d look like a rainforest.

OK, so not a lot new to report since a lot of what we are doing is behind-the-scenes, super-secret wedding stuff. Stay tuned for a post soon on one of the season’s most trendy vegetables that most of us in East Tennessee call a stinky weed.

Springtime in Knoxville!

I know, I know it’s been a while since I have blogged. I don’t have a very good excuse either! A lot has gone on since my last one so here’s a recap:

I got a job! Pretty much my dream job as well.

I passed my boards! That was a really hard feat but the worst parts were: a. going to take it in the middle of an ice storm and b. waiting a whole week for my results!

The husband-elect and I are embarking on one culinary adventure after another in our home and abroad. We’ve had a couple of dinner parties with friends in which we have broadened the horizons of our guests, then we have had our own minds blown in the most unlikely places such as Chattanooga, TN! St. John’s Meeting Place is an amazing spot there.

Our most recent adventures include that trip to Chattanooga to see Elton John and then to Savannah to finalize some wedding plans. Both trips were a lot of fun but they were both pretty action packed. The husband-elect and I are looking forward to a beach-do nothing vacation soon.

In more recent developments:

We have started a larger garden this year and E made me a couple of raised beds in which to grow our crops! We have radishes, carrots, sweet and hot peppers, brussel sprouts, te you, a host of herbs, tomatoes and lettuces. It’s going to be awesome! I hope we can keep the mice away this year so we can share this stuff with our peeps!

2 weekends ago was an especially exciting one as I went shopping for my wedding dress! I went down to Atlanta for the weekend to be with my mom, sis, and two of my very best friends. It also happened to be my sister’s birthday weekend so there was a lot of celebrating to do! I got to see my adorable niece whom I haven’t seen since Christmas and she has grown so much! She’s so adorable and spent all day Saturday with us as I tried on dress after dress looking for something that matched my unique personality. We didn’t have any luck Saturday but when Sunday came around I decided to give David’s Bridal a shot. We walked into the store, started looking at dresses, and there she was! The most perfect dress that I never thought I would fall in live with. Now, they did not have my size in the color I wanted but we clipped it to another one in a different color and I didn’t want to take it off! Needless to say, my mom and the rest of the crew loved it as well. I can’t wait to wear it in September!

Finally, this past weekend E and I hosted a birthday pizza party for his sister and cousin. This was not your ordinary pizza party though. We had mushroom crostini and arancini as the apps, a shaved asparagus and carrot salad, three different pizzas (mozzarella and olive oil, pesto chicken, and pepperoni with banana peppers), and we finished with a blood orange olive oil gelato, vanilla poppyseed cake with chocolate and a berry sauce. Everyone was well fed and we all had a lovely time. We even took advantage of the awesome weather and sat out by the fire for a while. It was a successful night!

Nearing the End

Were the Mayan’s Right?

This is not the normal ‘End of the year’ post… after all, if you listen to the people that think the Mayan’s meant something by ending their calendar one week from now, you’d think it’s the end of everything! No, there’s a lot of endings in addition to the end of the year. This marks the end of M’s long journey to become a Physician Assistant. Two years ago, just before we met, M had started school. It can only be called an ordeal, as much of what they throw at students is strictly meant to rattle them. Masochists. But it’s the end. Tomorrow morning at just past 10:30 AM, she will receive her degree and be free from the shackles (sorry, we saw A Christmas Carol last night at the Clarence Brown Theatre), of school. I’m so proud of her journey to get here. She has much more patients in dealing with the bureocratic  BS that she has had to deal with than I would ever have. I’ve never known M when she wasn’t a student. I’m sure life will be different. I’m very proud of her accomplishment.

As for the end of other things, of course, 2012 has had all kinds of endings. Many famous and not so famous people have died. Although it was in Dec 11, it’s been a year since one of my heroes, Christopher Hitchens died. It has been the end of a bitter election that has divided us even more as a country (I’m sure Hitchens would have been a riot to listen to throughout this campaign). A bright spot was the way Gov Chris Christie bonded with Pres Obama during the aftermath of Hurricane Sandy. It was the end of war in Iraq (or at least as far as we are concerned). It will be the end of the Clinton’s in politics… oh no, I forgot about the 2016 election! It was the end of President Lincoln. Wait, wrong again, that was just a movie as real as it seemed. It was sorta the end of Twinkies! The end of powerful unions, like them or not (I do). It was the end of La Costa/31 Bistro where M and I had our first date. Now taken over by a crunchy granola outdoor store. It was the end of icons like, Eastman Kodak, Hostess, American Sukuki, Saab, Ritz Camera… at least there were fewer bankruptcies this year than the last few years.

It was the end of school of my younger (next year I will have an extra one so T won’t be the youngest anymore) niece’s school. Now she enters the workforce…not to say she hasn’t worked her butt off the last few years. She has and I’m very proud. It was the end of renting for my older niece and her husband and they bought a home.

All this makes me realize that endings aren’t always bad. Sure, the loss of life, property, relationships, and businesses can be painful and depressing. But many endings like the end of school, the end of journeys, the end of less fortunate situations, turns out to be happy occasions. I’m happy about most of the endings this year. 2013… well who knows where we will all be in life in 12 months. We have a wedding to plan which is well on it’s way. We have big life decisions to ponder. And where we will be physically and emotionally and whether we will be hanging off the fiscal cliff or at war with some known or unknown enemy, none of us know. I know it’s been a good year for me. And I’m looking forward to another one in 2013.

Camping!

Necessities

So last weekend, after talking about it for 12 months, we went camping with Brian and Jerry. OK, so preface this with this is my first time camping..ever. so I expected that there would be some lively stories of me missing the comforts of home…but not so much. We decided on Cherokee National Forest (outside of Tellico Plains). It’s a little less regulated (i.e. we could have some booze) and a lot less busy than our Great Smokies National Park. We were later than expected on Saturday getting setup. Brian had to stop and eat (of course) before entering the park. Then, we couldn’t decide on the perfect location for to setup ‘Camp WTF’.

Once we got setup, we got a small fire going. The trees were at peak fall color and the weather was amazing. Sunny and in the 70′s. Tent setup was much easier than expected. I’d already warned everyone that there was likely to be a flurry of foul language when I started setting it up. Wow, they’re a lot easier than they were was a kid! in 15 minutes, we were all setup.  Jerry had to meet us there because of work obligations and since we were in a location a little hard to describe, Brian went to meet him. M and I manned the fire (oh crap, my cigars were in the car with Brian… grrrrr!) and started sampling the beverages. M had made a Cherry, Apple, Pineapple vodka punch that was yummy, but I settled down with some Famous Grouse.

When Brian and Jerry got back, we started dinner (unfortunately we waited until a little too close to dark so it made it difficult). I loved Jerry’s quote, “This is why we enjoy going camping with E & M. If we’d came, we would have sandwiches and chips… they bring a gourmet diner” And we kinda did. We (OK M did most of the work on this one) had braised brats with grilled onion and belle peppers and ‘puppy chow’ for dessert.

Jerry spent the evening crafting Blair Witch props to leave behind and film for his daily video entry. And we laughed and chatted into the morning. And even popped some popcorn.

Now, sleeping was a different story… next time E will have an air mattress or take a memory foam mat or something. It’s amazing how uncomfortable a pea sized rock can be. And we were a little cold. Just a little forethought will fix that next time. And apparently someone was wandering through our campsite during the night. I missed that, but we had plenty of firepower in case of thugs or bears.

M and I woke up early and THANK GOODNESS, she had brought coffee!! It was great to sit around before the boys woke up, get the fire going, and have coffee. It was just brisk enough to be able to wear a heavy sweater and have  a small fire. Once the boys got up, We had chirozo and egg breakfast burritos. We soon started packing and the funniest part was trying to watch J & B fold a tent as a team. They should NEVER try to work as a team! Hilarious.

All in all, it was a really fun little trip. I wish we’d got there a little earlier and stayed a little longer, but I’m already looking forward to going back.

Atlanta for Labor Day

Basil meets ‘Breezy’

We had a really relaxing weekend… which was really nice! We went to Atlanta (or close anyway) to see M’s family. We stayed at Granny D’s new condo. Once we had Basil fully drugged out of his gourd for the trip (he foams if he’s not drugged into oblivion). We had a nice drive down. Me and Basil finally got to see the newest addition to the family. After a quick sniff, Basil avoided any and all eye contact with ‘the new bald puppy’.

 

The Bone Garden Cantina

We had an excellent meal at The Bone Garden Cantina. As everyone who knows us knows, we’re foodies. And I’d been wanting to try goat for a while. It’s the most widely eaten meat in the world. I was certain that someonein Atlanta would have goat meat and sure ‘nuf M was able to find The Bone Garden. I odered a goat taco to pass around the table and was really surprised.

Our server discouraged us from ordering more than one because goat has a ‘peculiar’ flavor. So we only ordered one. And let me tell you it’s delicious. I was expecting something rather gamey like lamb. But it was not fatty and was very similar to bison. Very very good! If you havent’ tried it, please do. You’re really missing out. We also really enjoyed the atmosphere of the Bone Garden. We’d read mixed reviews online, but the service was excellent.

The rest of the weekend was mostly just being lazy. We took a little time and tried to find some neat mid-century modern homes to look at…. Truth be told, we mostly just wondered around aimlessly. But it was fun anyway!

 

And now it’s back to the grind.

Site Updates

While we are suffering through brutal humidity here in Tennessee, I thought I’d spend a little time updating our blog functionality. If you notice, the lefthand column has a few new additions (scroll all the way to the bottom if you’re on a mobile device). We’ve added a registry, a countdown and a couple new vendors that we’re excited to work with.

In addition to her school, wife-elect is in high gear dreaming about dresses. (Granny D is also in on the action!).

Our dogs are stressing us out and we’ve just about given up hope that the 3 of our kids are going to be able to co-exist in the same house. We’re heartbroken about it, but it looks like we may have to give Bernie or Basil to a loving home. We will have some pretty stiff criteria though! And will need visitation rights. We’ve had one of the best behaviorist in the area visit with us and it’s just not working. It’s very sad for us.

Another Vendor…check!

We’re excited to find a photographer!
I think we’ve found our wedding photographer! We’re just waiting to hear back about some travel pricing. We’ve interviewed some amazing photographers in this process! We’ve just had a hard time balancing price vs. our budget. I think we’ve found the perfect blend and we’re excited to work with her.

On another note, tonight is ‘dog whisperer’ night. I hope to be able to report tomorrow that we have been given the skills to deal with our out-of-control situation. I’ve worked with the spouse of the behaviorist that is coming and it’s like watching David Copperfield work so we have high hopes that, with a lot of work, we can manage this situation. More tomorrow…

Weird post

For whatever reason the last post didnt make it correctly:

What a week. Wow our dogs have went berzerk. They all want to kill one another after living happily together for a year+. We have a top notch behaviourist coming Wed to help us try to sort this mess out.

It is amazing how much stress this imposes on an already stressed couple. We are hurt, sad, and disappointed with our lack of pack leadership. Very sad

We are getting quotes in from vendors and skyping and calling people trying to get things in order. More later!

We had a nice time last night at 31 Bisto with friends and family from Knoxville. A street singer was busking on the Square and we asked him to entertain us for a moment… hilarious. I’m quite certain he doesn’t even remember the encounter today. Hilarity!

Old Fashioned with American Spirit at TAP

We had a great trip to Atlanta for a long weekend. Upon arrival I was a little concerned because the hotel was beseached with testosterone spewing frat boys in town for some basketball game… they wore blue so I’m guessing it wasn’t the TN Volunteers. But happily, other than one 4AM parade thru the hallway, it was peaceful. We stayed at the Georgian Terrace (sleeping place of several former, now deceased presidents). The lobby is a grand column seemingly towering to the clouds… our room was not exactly expansive though…but still, it was fine. After settling in Friday, we made a stop at TAP: A Gastro Pub. A very neat little place on Peachtree that is a sister restaurant to our Saturday dinner destination. Unfortunately for us, we happened upon a new whiskey that is just starting to be distributed. Folks, if you like whiskey (or even vodka), give American Spirit a try. Smoothest whiskey I’ve ever had and I can’t wait to try some with a cigar. We had a few… then a few more drinks. And maybe an appetizer…um, things were foggy by then.

After our afternoon haze subsided, we met Mandee’s friend M.E. at the Vortex for a great burger. The folks at Vortex are so sweet, happy and charming (that was sarcasm). Not willing to call it a night just yet (dinner was early), we went to Beluga Martini and Jazz Bar. You can read my review at Yelp. The 3 of us had a good time in a relaxed atmosphere and afterwards, it was time to call it a night.

Birthday Girl!

Saturday, I was in recovery mode for much of the day and definitely not on my game. Breakfast was at the Flying Biscuit with Granny D (Mandee’s Mom). It’s one of our must-haves when we’re in town. We visited Atlantic Station and Ikea for some shopping (obligatory). And met up with Cousin Brian who came down for the evening. And managed to FINALLY have lunch after a long wait and terrible service at California Pizza Kitchen. But the BLT Pizza was oh so good.

We had just enough time after lunch to make our way back to the hotel and change for dinner. A few miles away was our REAL destination for the trip to Atlanta… Two Urban Licks. The three of us met up with the rest of the family (who were convinced we had arranged all this for some special announcement….sorry for the disappointment guys). Dinner was AWESOME! YUM YUM. If you’re in Atlanta, you have to make it a stop.

After dinner and happy birthdays, our bellies were stuffed and we were off to bar hop a bit. On the list were Joe’s On Juniper, and Blake’s. Even though we were warned by our gay-bashing Muslim cabby to stay away from ‘dim places… “No No No, you don’t want to go there”. We didn’t appreciate that…and the tip showed. I think were were all a little off our game that night. We sat, mostly in a daze people watching. But had fun nevertheless.

Saturday after a great breakfast at J. Christopher, we stopped in the Market (um, I can’t remember the name, but it’s where Alton Brown shops) And picked up a Pork Belly that will go on the grill tomorrow night. We were then on the road to Ktown.

We had a really nice weekend and can’t wait for another trip to Elton John’s American hometown!

It’s another birthday!

In just over a week Mandee turns 32!! (all indications are that she’s not going to cath up with me) we’re headed to atlanta on Friday for a long weekend celebration as soon as Mandee finishes up a few tests at school. Looking forward to the trip, some relaxation at the Georgian Terrace and some great eats at Two Urban Licks. We need a little getaway and the weather looks like it’ll cooperate. Stay tuned for updates!

Birthday Weekend…

And so it begins… my last year in the 30s has started! I sit and write this on what would have been my dad’s 80th birthday. Wow, hard to believe. What a nice weekend it was, even though it started off a little rocky. Friday evening, my niece Taylor was sent to the emergency room. She has been suffering with a strange absess of a tooth that had migrated into her jaw and she needed emergency surgery. We’ve been thoroughly impressed with the care given by her surgeon, Jason Kennedy.

Mandee was going to cook a big dinner for friends and family on Saturday, but given that my sister and Taylor would have booth been exhausted, we decided to put it off until Sunday. As a backup, we joined Brian and Jerry for dinner and then cigars, drinks, and a great new local band, Taboo, at Baker Peters Jazz Club.

It was a great, but too expensive evening. Sunday, pre-Superbowl, we were joined by friends and family and Mandee made Beef bourguignon, Celeriac Root Puree, a fab salad… to top it off, she made a Tira Misu to die for! Yum!!! What a great birthday… and now the countdown to 4-0!

Holiday 2011

On Friday I headed down to the Atlanta area to join Mandee for Christmas. We met up at Mike and Melissa’s for a wonderful dinner crafted by Melissa and Mandee (Although Mike and Mandee’s mom laid claim to the fixin’s)… YUM! Eric definitely had a little too much holiday spirit and Saturday morning was a slow start for me. We then went to David and Angie’s for Christmas Eve festivities and again, had a spendid meal and company. I got to meet more of the extended family. The real surprise of the evening was given to Mandee’s mom. She was given a little scroll from Angel and when she unrolled it, we (and most of the neighborhood) heard “We’re having a baby!!”

Hahaa… Angel and Jason are expecting a bundle of joy in the Summer and everyone is so excited. Best present for sure! Sunday morning was present opening at Mike and Melissa’s beautiful home. I received lots of great goodies as did everyone else. Mandee got me a great trenchcoat that I’ve been wanting and her big gift was a first Edition version of Julia Child’s Art of French Cooking. Then we were off to Granny D’s (I mean Mandee’s mom).

We had a relaxing day and a half there and dinner with Angel and Jason as well. It was nice to relax a bit. Mandee made a fantastic dinner (even though I forgot half the ingredients at Mike and Melissa’s… that’s how I roll). Then we started the long drive back to Knoxville.

Tuesday we went to my sister and brother-in-law’s house for what was expected to be a lighter lunch…I, of course, ended up in a chair asking someone to cut the stack cake and buckeyes out of my stomach to bring me some relief. My sister’s big gift to Mandee and I was a 2-year project she had been working on. A 3-volume collection of our family’s favorite recipies. What a great treasure.

So all-in-all it was one of the best holidays ever! Now, it’s time to eat healthily and get 2012 started!!

Cut Throat!

Momma Lasseter with the Grandkids

So Mandee walked across the stage (Part 1…Part 2 is in a year) for her White Coat Ceremony this weekend. In attendance were myself, of course, her mom, sister, friend Heather, my sister and brother-in-law, and cousin Brian. Mandee pretty much covered the details, but I felt like saying how proud we are that she has over half of this trial behind her and is heading into the final year before getting more initials after her name.

The following Monday, we were up early and preparing for her to go into the hospital to have her thyroid out. Momma Lasseter and I shuttled her to the hospital… as for me, I was in major stress shutdown mode and basically trying to run on autopilot so as to not show how truly stressed I was. The surgery was brief compared to what we were told and the surgeon reported great results. On that note, I have to comliment her excellent surgeon, Dr Zirkle. He did an outstanding job and every person that we mentioned his name to in the hospital was extremely complimentary. The staff at Ft Sanders was also very good. The food, not so much. I stayed the night with her even thought she came out of surgery smiling and joking. She refused to share her percocets with me btw. After a good review by Dr Zirkle, we came home and spent the day feeding her meds (more for recreation than anything). Her staples were removed on Wednesday and she and Momma Lasseter were on their way to Atlanta for the holidays.

There were a couple minutes during the process that made my heart sputter, but it all worked out well and I’m anxious to get to Atlanta to see her for a long weekend. -E

Another busy week

This coming week is sure to be hectic. Tomorrow, Mandee is participating in her White Coat Ceremoney (Meaning, it is the end of her strictly classroom studies and she’s about to embark on clinical practice for a year). So happy that her mom, sister, and close friend Heather are going to be able to make a trek up from GA. As well, my sister, brother-in-law, and other close friends will be able to attend. In preparation, Basil helped up prepare a huge batch of my mom’s chili last evening. Yum! I can’t wait to try it!!

Then on Monday, Mandee is due to have her over-active thyroid removed. No fun there! But we are all sure the recovery will be smooth. -E

An Anniversary

Yesterday marked a year since Mandee and I met in person during the snowstorm. We celebrated the evening at the Grill at Highlands Row. I lovely fine dining experience and the atmosphere is great. Several of our friends had complimented the establishment and they were right! We started out with signature Moonshine Martinis. Mandee’s choice was the Apple Pie Martini and mine was straight-up. After having a taste of her’s, I quickly asked if mine could be adjusted and they obliged. Mandee’s Medium-Rare steak was slightly over cooked but my Medium-Well Filet was perfect inevery way along with grilled asparagus and mandee had Okra fries. To finish the evening, we were presented a fabulous Chocolate Souffle with not quite enough Raspberries…but again, our server graciously brought more to the table. The staff of the Grill seemed excellent and even take your coat for you when you come in. That gesture seems to be a lost art these days.

It was a lovely dining experience to mark a year together.
