What a summer!

I know….i know…it’s been a while since I have blogged. I have just been a busy little bee this summer and it is the last thing on the list these days. Here’s a quick catch up while I am waiting on patients that aren’t scheduled until 9 a.m. I have successfully completed my Capstone project for PA school. For those of you that have incredibly confused looks, a capstone is just a different word for thesis or big bad research paper. I wrote it on Graves disease and it was long and mostly boring, but at any rate it is done and i turn my final copy in on September 6. Yay! Other news…i want to introduce you to one of the most special people in the world to me – my new niece, Aubree!!! (E, you are the other one). Little Breezee was born July 7 and was a tiny little thing weighing in at 5# 8 oz. She was 4 weeks early and gave my sister a fit that put her into pre-eclampsia so like last year around this time I ran home to Atlanta. Unlike last year, however, we got a baby that we could take home and snuggle and love like nobody’s business. Here’s a pic…

This was her a few days ago…I just love her! Thats about all the news I have for now. What about wedding news you ask??? Oh, well, E and I are not sharing many details of the impending nuptials because we want all of our guests to be amazed by the spectacle we make. Ok, so we aren’t going to make a spectacle of ourselves but it is going to be super fun. :) Date: September 20, 2013. Location: some square in Savannah, GA with our closest peeps. Post-party: Knoxville Zoo, September 28. YAY!!!!!!!! Also, E and i have been experimenting with sorbets in my attempt at a low-glycemic index diet. Sorbet is definitely the way to go with this. Its a sweet, but it is also made of fruit which are lower GI foods. This makes me and my sweet tooth very happy. Tonight it is banana ice cream made from…….only bananas! Apparently all you have to do is put frozen banana slices in you food processor and push “On”. We shall see and report later! Have a great day! Love ya E!

BTW…that pic is from Feast with the Beasts at the Zoo over the weekend. If you haven’t been…you seriously need to next year. SOOO much fun!

What an exciting week last week!

I will leave the details up to ML to tell, but Saturday morning, she headed to hometown Atlanta and was able to be there for the birth of her very first niece! I suppose that makes me the Uncle-Elect. Aubree Lauren was a little early, but other than size, looks like she is a month old already! Welcome to the world Aubree!!!

Craziness…

So far April has been as little fun as I ever want to have.  I’ve been in my surgery rotation at UT where I am treated as if I were an actual surgery resident…only not like the ones on Gray’s anatomy.  :)   I’m exhausted and to make it even better I am working nights with the trauma team this week.  Im not gonna lie…I miss the husband elect so much I made him have breakfast with me yesterday morning so I could see him for more than 5 minutes. How weird is that? I mean I never thought that I would be like that but I guess that’s what happens when you find Mr. Wonderful.  :)

Happy weekend everyone!

Road Trip!

Well, I have successfully completed two of my eight clinical rotations! Now, the husband-elect and I are headed to the big city of Atlanta for a weekend of fun.  Among the things on our ‘to do’ list is dinner at TWO Urban Licks.  This place is quickly becoming one of our fave places to dine anywhere.  The atmosphere is cool and the food is phenomenal.  I hope to get a small amount of shopping in to while we are there.  ;)

My birthday is coming up next week and I will be 32.  I always wondered why people say that your 30′s are the best years of your life and now I understand. I feel like I have it all at this point in my life.  I have a wonderful man that loves me quirkiness and all PLUS I’m on the road to a career that I feel I am going to love.  What more could a girl ask for? I mean, a vacation in Bora Bora would be icing on the cake but I’m perfectly happy with my man and our three little dogs.

Happy March Everyone!

The start…

Happy New Year! We are on the third day of 2012 and it is already off-kilter for me, mostly because I am sitting at home instead of at my first day of family medicine because of icy roads in Harriman. Ohhh well, that just gives me time to write about all things Christmas and NYE.

First off, I am pleased to say that I am fully recovered from surgery and I have the tiniest scar in the world to show for it. Ok, maybe not the smallest but it’s definitely barely there.

My first christmas with E was just wonderful and I am looking forward to many many more with him. He gave me the best gift, a first edition of Julia Child’s “The Art of French Cooking”. I was stunned and very excited that he remembered from way back when that I wanted it very badly. Good job love! I gave him a pretty fab trench coat if I do say so myself. He loves it but I was really nervous every time we went shopping and he picked one up. So glad he didn’t buy it for himself. In other Christmas news, my sister gave us a wonderful a gift Christmas eve with the announcement that she and her hubby are expecting a baby in the summertime. Such a happy holiday for us!

E and I returned to knoxville the day after christmas but not without a little emotion from my mom and myself (thanks to my out of control emotions). The next day we wandered over to E’s sister’s house to exchange gifts with them and, of course, eat some more. It was all fun and games until E was presented with a 3-volume set of cookbooks his sister had put together complete with family photos. This was a little bit of a tear jerker for the both of us because it’s like having a little piece of his parents whom I never had the pleasure of meeting. Thanks Karen!

The rest of the week was pretty lazy…E and I spent a lot of time together which was nice because we didn’t get a whole lot of alone time at Christmas. Ok, so we really didn’t get any. NYE was lovely because it was just us and we went to Savelli’s, drank a fabulous inexpensive champagne, and ate yummy pasta. The champagne deserves a plug here because it actually has depth of flavor. It’s Korbel Blanc de Noirs and we were introduced to it by the World of Beverage in Peachtree City, GA on christmas eve. According to the seller it is made from Pinot noir grapes which makes it a more flavorful sparkling wine. It also has a very pretty lighter than blush pink color. Highly recommend. After dinner, we went to Sapphire where we spent our first new year’s together. Another good time but not without some post ball-drop trauma drama from some neighboring celebrators. We can’t quite figure out if the tussle was over a seat that the guy’s date was clearly not sitting in most of the evening or if there was lemon juice in the eye that started the whole thing. I just know that there was a broken champagne flute then a beer thrown in said guy’s face with excellent accuracy. The bartenders at Sapphire were ready for action as they were on top of then over the bar before E could pull me out of the way looking for a fast exit.

All in all it was a wonderful end to a wonderful year and a promising start to the new year with wedding planning (details to come) and me finishing up PA school. YAY!

Happy New Year again!

P.S. to my wonderful fiancé …. I Love You

Dinner with Friends

We had a lovely dinner with friends Heather, PJ, and Brian last night. Mandee, as usual, displayed her astounding culinary skills.

Holiday Party

We are hosting a holiday cocktail party for many of our closest friends on December 10th. With a little luck… and some creative strategy, we will have more than the holidays to celebrate with our friends. The theme is 1960s… anything from dapper Don Draper to Twiggy Mod to Hippy Chic. Our guests are encouraged to dress the part to look very 60s.

This is our first big party to host together. We’ve had couples over and such, but not this many people. The dogs are scheduled to have a vacation night at the kennels to give us time to focus on our guests. Who knows what Santa will show up with!

Planning continues

| Filed under Engagement Eric Mandee Uncategorized

I let a few people know my plans yesterday immediately after I purchased the ring. Yowzer! A little over a month!! I’m already nervous. Little does Mandee know that my insomnia is probably caused by excitement. My plans are well underway for the event! I’m getting a few co-conspirators prepped now.
